Sabut Bhindi (Whole Spicy Okra) Recipe

    Cooking time: 35-40 minutes

    Serves: 4

    Ingredients:

    1 lb 2 oz okra, trimmed

    3 teaspoons vegetable oil

    1 teaspoon cumin seeds

    2 onions, chopped

    1 teaspoon ground ginger

    10 cloves garlic, crushed

    1 teaspoon ground turmeric

    2 teaspoons ground coriander

    1 teaspoo amchoor

    1 teapoon Garam Masala

    1 teaspoon chili powder

    1 teaspoon ground cumin

    pinch of asafetida

    2 tomatoes, chopped

    salt

    Cooking Instructions:

    Slit the okra lengthwise down one side without slicing them in two.

    Heat the oil in a large, heavy based pan over medium heath, add the cumin seeds and stir-fry for about 1 minutes, or until they start to splutter.  Add the onions, ginger and garlic and stir-fry for about 5 minutes.

    Add the okra and fry for a further 15 minutes.  Now add all the spices and the tomatoes, then season with salt and mix well. Reduce the heat, cover and simmer for about 15 minutes, stirring occasionally to stop the okra from sticking to the pan. Remove from the heat and keep covered until ready to serve.
